Making Ice Cream & Injera

There is always something to make or do and one has to learn to be creative to enjoy the most basic things.  Making ice cream is something I learned several years ago and last month, I made a double batch.  It was enjoyed on a hot sunny afternoon.   


The kids also asked if they could make injera.  So one morning we joined Mesalech and she filled a small gourd with the batter.  You have to pour it in a circular motion starting on the outside and pouring around and around until the pancake is filled.  You end in the middle.  The injera pancake is covered with a grass lid and baked for a minute or two and then picked up with bare hands.  The children made small injera but they are usually about 2.5 feet in diameter.



And here Sonia is enjoying eating the injera that the children made.
